Ingredients (4 Servings)
- 4 salmon fillets
- 4 cloves garlic, minced
- 10 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 2 tablespoons lemon juice
- Brocoli, carrot or any veges (Steamed)
- Aluminium foil
- WHITE SAUCE
- 2 tablespoons butter
- 1 medium size onion, finely chopped
- 2 tablespoons plain flour
- 1 teaspoon dried mixed herb
- 300ml fresh milk
- Salt and pepper to taste
Method
- In a medium glass bowl, prepare marinade by mixing garlic, olive oil, oregano, salt, pepper and lemon juice.
- Place salmon fillets in a medium glass baking dish, and cover with the marinade.
- Marinate in the refrigerator about 1 hour, turning occasionally.
- Preheat oven to 375 degrees F (190 degrees C).
- Place fillets in aluminum foil, cover with marinade, and seal.
- Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.
- WHITE SAUCE : In a saucepan, melt butter. Saute chopped onion until soft. Stir in flour, mixed. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Season with pepper and salt. Add dried mixed herb when serve.
